So I'm looking for Jazz remixes of video game soundtracks, in the vein of Brink of Time. Does anyone have any recommendations?

I'm gonna be useless and say Turnabout Jazz Soul. Ya beat me to it. Castlevania: Sonata of the Damned was a solo album by Joshua Morse that covers many songs from various CV games in a more modern acid-jazz style. The quality varies but I recommend checking it out. Also this MGS remix was on the front page and I think you might like it if you prefer more traditional jazz.

I seriously looped that about 15 times when I first downloaded the thing! It's very pretty

No video game remixes from my side, but I'll just hijack this thread for a slight off-topic and promote the magnificent Japanese modern jazz combo Mouse on the Keys, for those who don't know'em yet (No, I'm not affiliated to them, I'm just a big fan ). That said, they create a wonderful urban feeling that would resonate well with video games based on contemporary Japan, like the Ryu ga Gotoku series, or maybe even some modern JRPGs like Persona.

I wouldn't mind MvC2's OST as listening material, but it feels wildly out of place for the game. (Though I do like CvS2's 'This is True Love Makin', so...)
