What are some good shmups that few people are familiar with?
I would highly recommend Flying Hero and Cosmo Gang the Video for SFC, and Over Horizon for Famicom.

Go go: G Darius! I love that game, its that big Charge beam of death that almost causes your Dual Shock controller to shake appart that does it to me - now you're playing with power Damn right! That title screen music alone does it for me Dig that bass! I forgot to add Axelay- I remember at the time of release people saying the first level was tougher than the rest of the game- um did they play the same final boss on Hard mode? :\ Also the music on stage 2 is totally fantastic.

Super Star Soldier, the remake for the PSP if you can get it. Also, Gradius V. Best first stage I've ever played.

Zanac X Zanac is probably the best one I've played.

For a great lesser known shmup, check out Hyper Duel for the Arcade (via MAME). But if you can track down the spruced up Sega Saturn version, by all means go for that instead.

Under Defeat for Dreamcast. As far as classic get anything for the Turbo Duo. Lords of Thunder, Gate of Thunder, Sapphire, Sylphia, Spriggan, etc.

I highly recommend Android Assault/Bari Arm if you happen to own a Sega CD. The gameplay isn't terribly remarkable, but the game's presentation and music are rather nifty.

I recommend anything by Toaplan. You'll need to enable autofire on some of them to get the full effect, though Also, anything by Konami. Juno First is awesome, although it's not like any of the other games in this thread (having more in common with games of its era). Thunder Cross 1 & 2, A-Jax, Lightning Fighters/Trigon, Xexex, etc.

Their best early shmup.I think this is miles better than Gyruss and Time Pilot. My picks are Katakis (the infamous R-type clone for C64,unoriginal to the core but very playable),Apidya (an Amiga insect-themed shooter) and R-Type Delta.
