Well, it would probably be more accurate to say FOUNDED by former employees of another company because pretty much no developer consists solely of those with roots in another company. Once they get off the ground, they'll start hiring people who have no past affiliation with other companies.
Anyway, tri-Ace was founded by former Telenet employees (specifically those on the Wolf Team development team), and Westone was founded by former Tecmo employees.

One other famous one is Quintet (makers of the Gaia games), who consisted of former Falcom employees. Recently, there's Yacht Club Games, made up of former WayForward employees. And technically, XSEED was started by former Square Enix employees. -Tom

M2 recently absorbed most of the staff from CAVE's console and arcade development divisions.

Platinum Games has a couple of Clover Studio people in it. And Mistwalker probably consists of more Squeenix people than just Sakaguchi. And then we have Access Games which ate Whoopee Camp whole, or so i've heard.

I believe Accolade and Acclaim were both founded by former Activision employees, as well.

Monolith Soft was also founded by (two) people who left Square.
Avalanche Software was founded by people from Sculptured Software...
Ion Storm was founded by John Romero and Tom Hall of id Software...

Curiosly, members of Gazelle and Raizing later went to Cave. Family reunion!
Red Barrels, the French-Canadian developer of Outlast, was founded by people who mostly worked several years under Ubisoft Montreal.
11Bit (the Anomaly series) and Flying Wild Hog (Hard Reset, Shadow Warriro 2013) originated from some of Poland's bigger studios. Reportedly, 11Bit was founded by members of Metropolis Software who were unhappy of their studio being reduced to a satellite of CD Projekt after being bought by the latter. FWH has members from People Can Fly, who brought their previous expertise from Painkiller.
I remember a studio called Granzella being founded by former key members of Irem after they finally abandoned the empty husk of it.
22Cans is a small studio founded by Peter Moulinex after he left Lionhead in 2012.

Brownie Brown, yes. 1-Up is unclear because all notable staff from the Square era had left the company by then (AFAIK, Shinichi Kameoka was the only one left by the time Fantasy Life neared completion, and he resigned after the game was released. 1-Up is now an asset shop for Nintendo). ....which makes things difficult to classify. Some studios were established by former staff of a particular studio who've since moved on. Other studios were started by execs from a particular company but without the creative talent.
