It really depends on the specific game about how easy it is to rip. With original Xbox discs, you'll generally not be able to read them on a PC disc drive due to the way they're encoded, but with a softmodded Xbox you should be able to (somehow) gain access to their file system over FTP. Alternatively, if you have an ISO of the game from whatever source, those can be opened using Daemon Tools or the virtual-drive program of your choice. As far as file formats go, they vary wildly between games, but if the game shows an ADX logo at the start, that means you'll have a fairly easy time getting at the audio; the Foobar2000 plugin foo_vgmstream (I think?) can open ADX files and convert them to other formats.
Some Xbox games store their audio in an Xbox-proprietary 4-bit ADPCM format that you'll need a special plugin to open, others may have all their music in plain old Windows Media Audio (WMA) files that can open and convert with just about any media playing program.
Sadly, I don't know anything about Otogi itself, so I don't know what you'll be up against. Your first task is getting the disc's file system opened. It might involve taking extra steps that you may not be keen on doing, assuming you only have the physical disc and not a soft-modded Xbox or the network FTP setup.
