Yeah, don't go crazy making a list. If the games had just one resolution all the time, that would be as easy as just loading the game. But a lot of games have different resolutions for different situations. In the case of the SNES and Genesis, there are only two resolutions.
But in the case of N64 and Playstation. Good god. Those consoles have over 10 different resolutions that change all the time depending if you're looking at a menu, FMV, gameplay, ending, credits, etc.
Resident Evil 2 for the N64 has a different resolution for each screen. Drove me crazy when I was taking screenshots.

I think the majority of SNES games used the standard resolution. The only examples of hi-res I can think of are like Secret of Mana's menu. I think a couple of Japanese RPGs used the hi-res only for the text window scanlines to display hi-res kanji.

Sounds about right. My understanding is that the SNES' 512 resolutions basically go 16 color, so used in-game for the entire duration, it'd be like an early NES game. I believe there are a number of title screens that use the 512 as well.

Yeah, most hi-res SNES examples I can think of are only for menus and whatnot; the only example I can recall that uses it for gameplay is RPM Racing, at the cost of the game being rather slow and not having a lot of detail, which is why the devs went for the lo-res mode for Rock 'n' Roll Racing.

Yeah, the SNES' hi-res mode was mostly for menus and credits, but even then it was rarely used.

The title screen of Ranger X was mentioned. I think the reason there is because of the scaling effect present there. Any other MEgadrive game I've seen that does a true scaling effect like that has absolutely killed the framerate (the ending of Thunderforce 3 and the death animation of the final boss of Super Fantasy Zone) so that might be the reason there for the lower resolution.
