Happened to me in FF7, where I managed to defeat Sephiroth with Cloud being the only usable party member (Barret and Tifa had A LOT of status ailments).
Similarly, I managed to mow down the final boss on Star Ocean 3 with one last regular attack using Fayt after both Nell and Cliff were incapacitated.

It happened to me an enormous amount of time, especially with bosses in japanese games. My most treasured memory is when I finally beat Fantasy Zone 2 after 6 months of trying. I really was on my last life when I beat evil opa-opa. It remains my most staisfying video game victory of all time.

Loony Tunes B-Ball on Black Friday... never forgot this one. Decided to head home that evening (2010) instead of going shopping with the cousins as I went out for BF the previous year and it just wasn't worth it. Rather stay home and pop in a game. Played the highest level and was up a point or two. The computer heaved a half court shot which I initially blocked, but it deflected back to him and he chucked it with literally .01 on the clock left. The ball sailed through the air as the buzzer sounded. My heart was beating so fast ... finally it came crashing down hard on the left side of the rim and bounced out. I barely won. It was quite a high.
Then I popped in Terranigma for the first time and began my quest with that one. One of the best gaming nights of my life. Lot of highs! And on a side note, I have not done a Black Friday ever since.

Final boss in Mario&Luigi - Super Star Saga. One mistake in certain parts and you're dead meat. Although it's not so hard once you find the tricks, I managed to beat it without much trial and error and without any need to level up more, it was still quite stressful.
