I've tried running these in mame64 and mame plus using roms from emuparadise. For most of them the emu says they don't work yet.
Blue's Journey? says file is missing despite green color code, doesn't show up in mame plus Crazy Taxi? says file is missing, doesn't show up in mame plus Virtual On Daytona USA 1-2 Dead or Alive Desert Tank Fighting Vipers Gunblade NY House of the Dead Indy 500 Jurassic Park? Are you new to MAME? Because MAME tells you when a game is not emulated correctly or if save states are not officially supported. If you see that message, then no need to ask if the game works or not. 99% of the games you mentioned are not emulated correctly or completely in MAME.
Also, make sure you are using the latest MAME version. Some of those errors means either your romset/bios are outdated or MAME is.
If you want to play those Sega games, then download dedicated Sega emulators such as Model 2, Demul, Chankast, etc. Games should work fine (and faster) in those emus.

No, but I didn't think that kind of message would be universal. Turns out it wasn't for M2 sega games so I'm glad I asked about it.
I'll check out Demul and Chankast. This save state issue was with the M2 emulator though.

I don't understand your response. On your OP you said you had MAME64 and MAME Plus, and the errors you were getting are typical of the examples I explained before.
MAME does have universal warning messages assuming the games have the same issues. In the case of Model 2/3/Naomi you'll get a message saying the game is not emulated correctly, or that the game doesn't work. Assuming you didn't disable those messages, then you should get them each time you load a game.
Those emulators I mentioned are mostly Dreamcast emulators, so you can play the console version of the games you mentioned. For the Model 2 games, you can try the SSF emulator that plays Saturn games.

Ace Whatever pointed out I could use the "M2 emulator" (it has that generic a name), which I did, so I'm glad I asked because I didn't know there were specific emulators like that. Then when I said I got crashes when using saves, I meant in that emulator (it crashes pretty much every time I load a save except right after booting a game up).
Universal in that if one mame emulator has an issue, others will too, is what I thought you meant.
Thanks but I wanted to try the arcade versions, since I've never played those in most cases.

Ok I feel like this is a continuation of another thread I didn't read because you're mentioning things I don't see in this thread.
Demul and other dreamcast emulators play the Arcade versions too.

This is why I said again that I wanted to play the arcade versions, and I could see that one of those DC emulators you mentioned could also play arcade versions. "Model 2 emulator" plays the m2 games, so that bit is solved except for the save state issue.

For what it's worth, I was able to do a full playthrough of ST-V game Guardian Force on MAME and the only problem I had was that when the time limit ran out at the end of the game it kept going and didn't take me to an ending.
