So they released one game in 1997 and two in 2007 and nothing in between? How does a developer stay in business in the meantime?

I'm not entirely sure of the lineage, but I believe they did Princess Crown for Atlus/Sega in 97, and then worked for other companies in the meantime working on other games. It wasn't until recently that they broke off and founded Vanillaware. They had apparently been working on concepts and assets all of those years, but it wasn't until 2005 or so when Vanillaware was actually founded did work actually start for real on Odin Sphere. This is all George Kamitani, BTW...I'm not sure exactly how many of the staff members beyond him are the same.
Or so I recall from some interviews/posting I read somewhere.

Yeah, if there's no mention of anything, then developers are generally doing freelance work elsewhere for a buck. Of course, Vanillaware wouldn't credit themselves to any of that.
Now, why they weren't able to create games until then is a better question and is likely a combination of funding, resources, timing, and desire.

Yea, they didn't become "Vanillaware" until 2004. Until then, most of them were at Atlus until recently.

Two-year bump!
Any plans on adding a section for Muramasa: The Demon Blade? I've been playing it like mad these last few days, and it really seems to be the best of Princess Crown combined with the best of Odin Sphere. It's a testament to just HOW MUCH Vanillaware is improving with each release, and I believe it definitely deserves mention in this article.

Yeah, most likely, it depends on how much time I get to sink into it.

Good coverage! I gave Odin Sphere a quick spin back in the day and couldn't quite get into it. From the article it sounds like it's not quite the game for my gameplay sensibilities, but I still get the feeling I should give it another chance.
Some nitpicks:
Princess Crown
"There's all kinds of trouble afoot, ranging from witches that are kidnapped to kids to dragons that are terrorizing the populace." I'm just guessing but should it be witches that are kidnapping kids?
"Naturally, life outside the castle isn't quite as she'd imagined it, especially when her sister and kidnapped, and she learns of an evil sorceress summoning great evil, who is naturally out to destroy everything." - "sister is kidnapped", I assume. "evil sorceress summoning great evil, who is naturally out to destroy everything" feels kind of clunky too, as if the great evil was out to destroy everything but I assume it means the sorceress. Feels like it's cramming too much into one sentence.
"Each of these locations is connected by straight pathway." straight pathways?
Odin Sphere
"each chapter usually has two at least two mid-bosses and one primary boss" has an additional "two".
"At least it's central to the gameplay as it was in Princess Crown, as it's much easier to regenerate." Should this be "not as central", since the paragraph is lamenting about the POW meter.
