Most of action games include escort objective/mission and -let's be honest- it's arduous/burdensome in most case You can mention it here so other will avoid it or at least aware of it
First, i go with 'Herdy Birdy' mission in Team Buddies (Playstation 1)
Because the protectee (one who need your escort/protection) is a bunch of penguin who refuse to follow you in most of the time and tend to separate among others
Second is truck in 'Defense Transport' mission of Lost World-Jurassic Park (Sega Genesis/Megadrive) The reason is simple, because the truck is damn big target (like occupy 80% of screen's height) and there's occasion of minefield on its way Luckily it runs quite slow

Escorting in SNES Lagoon anyone? Not difficult by any means since the people you escort are untouchable, but their walking speed? Oh. My. Actual. GOD. The dungeons in Lagoon were already lengthy so having to wait for someone who walks like a literal snail was incredibly frustrating.

VVVVVV has a fairly tough escort segment which happens pretty far into it. Not that long nor slow though.

There are far too many escort missions in the Rogue Squadron games - probably the main reason why I didn't find them that much fun.

Hunter the Reckoning has one escort mission that could be more annoying then a pain. Dead Rising games you had to escort survivors to a safe spot as I recall. Resident Evil 4, I think had one as well?
I hate escort missions in general

Yes, Resident Evil 4 has Ashley. But I never quite got why people hate it, to me it was fine as far es escorting goes. She's smart enough to stay out of fire, you can command her to hide, and by the time it starts to wear thin the story takes her away again. The parts with her really aren't that bad if you know what you do.

Just Cause 3 is pretty much 70-80 percent escort missions, and they are all awful.

I just remembered a terrible mission in the GB game X. You have to protect an auto-advancing convoy from alien attacks. And there is friendly fire, so it is quite easy to accidently hit the trucks you are supposed to helü.

Slightly related but maybe not quite are the ”protect” missions in Cobra Triangle. You need to protect people in the water from being abducted! I don’t remember if I rage quit here or at some of the other levels (perhaps the infuriating ones where you try to dodge whirlpools while also jumping over pits?) but lord knows I never finished Cobra Triangle..
EDIT: Oddly enough, Cobra Triangle is one of those games that I would love to see a remake/reboot of for modern consoles. I think it could be extremely awesome if done right. But ditch the protecting please...

Damascus Gear -Operation Tokyo- (mech-based action RPG) has 5 escort missions of which the first 3 are fine as you only need to protect 1 unit. The last two are just excruciating as there are multiple units that need protection for a certain amount of time. The friendly AI just loves to wander aimless not even sticking close with no sense of preservation which is the entire issue. I only managed to beat the fourth one because the friendly AI totally froze on some attempt and I managed to beat it that way. The Switch version came with all the DLC and one of them turned out to just be the main campaign but with different dialogue. That time, the enemy AI stopped being hostile on an attempt for some reason, and I just let the timer run out. The final escort mission which was part of a different piece of DLC, "only" has two units but they don't stay close to each other. I only beat that one because everything lined up so that the units were actually near each other at the end of the timer period so I could protect both instead of having one on the other side of the map getting blown to pieces.

Not that it's a game anyone would ever want to play, but a babysitting simulator seems like an interesting game. Having to juggle whatever you do to pass the time with looking after the kids.

I can absolutely see this being a thing. I imagine you take on more and more difficult children, and on higher levels you need to babysit hyper active octuplets with very special needs, diarrhea, diapers, going to the playground, environmental hazards and so on.

Bioshock Infinite has a girl that tags along with you most of the game. I don't think she can be harmed though and she has some psychic abilities or something that can help you out in firefights. Its a rare case of an escort that doesn't get in your way and only helps you.

There was Babysitting Mama for the Wii which came with a plush baby that you stuck the Wiimote into. I remember it being pretty varied too. Still have the baby somewhere.

Roger Rabbit in Hare Raising Havoc for the Amiga also revolves around Roger (supposedly) babysitting Baby Herman.
