Ashguine 3 is good,but I can't get past the first level. It just keeps looping.

Wracking my brains about more examples that might be worth a look... definitely more "interesting" than "great" territory though.
Skeleton Krew (Mega Drive) - Looking very stylish (#grimdark), I remember it being extremely hard though
Silent Bomber (PSX) - maybe more straightforward levels than what you're looking for, but has an interesting mechanic of laying bombs instead of shooting
Re-Loaded (PSX) - interesting partially manipulable/destructible environments, also has both a button for strafing while firing in the same direction as well as a button to stand in place while firing in different directions, which frankly all of these games should have. Levels are a bit huge and disorienting, tho
The Deadly Tower of Monsters (Steam) - gameplay is nothing too peculiar, but what makes it interesting is that it's presented like the DVD release of a schlocky sci-fi movie, complete with audio commentary by an old director voice, choppy animations for "stop motion" creatures and a bunch of other silly quirks, amongst countless jabs at video game conventions like breaking crates for items, etc.
