I'm curious about this. What are some games that focus primarily on those mechanics? Or generally games where your goal is to get records of different species of something. I'm not talking about games like Pokémon (monster-collecting games seem to be their own thing) or even games like Animal Crossing that have these elements but where it's not the main feature.
I've thought of the River King series (and its sea-themed spin-off, I don't remember the name) and an obscure DS game called Beetle King (from the SIMPLE series).
What are some others? System doesn't matter, I'm just curious about how common/uncommon these sorts of games are.

There's a popular arcade fishing game in Japan called Fishing Spirits
There's an entry on Nintendo Switch that I've been eyeing for a while

If you play Animal Crossing: New Leaf the right way, bug catching and fishing is the main game since that's the best source of money.
There's also Sega Bass Fishing which inspired Big's gameplay in Sonic Adventure. I think it's a tough genre to make into a stand alone game. SBF kinda makes sense as a arcade curiosity from the special controller, but it's not the most feature filled subject.

There was a fishing game included on the 3DS' AR Games collection that was pretty neat from what I recall. Then again I haven't touched that since 2011 so who knows how good that actually is. I haven't really played any dedicated fishing games aside from trying out Sega Bass Fishing on Wii once. I'd like to play one of the River King games some time. I only know a bit about the SNES one because it was featured on GCCX. That one has a weird RPG battle system where you encounted hostile rodents and stuff like that for some reason. excelsior, that looks pretty cool. I guess the best way to play that on a Switch would be to get the reel accessory and put the Switch down or something. I will say that I have no clue what's going on in any of that gameplay.

I couldn't find footage of handheld mode, but there is a message on start up that Joy Cons need to be plugged in for it so I've no clue. Plugged into the TV you can use the accessory or just the Joy Cons where it's motion based (twisting the con to reel in).
