I'm thinking this game will play a bit like a more action packed Elder Scrolls, with the free-roaming world and the westernesque fantasy setting. Coming up: Fromsoftware develops Elder Scrolls VI. Or maybe not.

Giant open-world sandbox games like GTA, Elder Scrolls, Fallout, etc, are poor comparisions. Knowing From Software, Dark Souls is not going to be a giant sandbox. When they say more open, interconnected areas, I'm assuming they mean in more of a King's Field/Metroidvania/Zelda sense. Instead of just having a single giant map to wander around on, it will still have distinct areas, they'll simply be connected and probably require a bit of backtracking and exploration, instead of being entirely linear stages accessed with a hub structure. Perhaps the game will have some kind of Hyrule Field setup going on, but I don't expect things to go any further than that.
Maybe I'm wrong, but I doubt it. Anybody expecting The Elder Scrolls: Demon's Souls edition is going to be disappointed.

I have no problem with an open world, just as long as the level design is on par with that of Demon's Souls. I have no interest in wandering through huge fields and bland maze-like labyrinths. Demon's Souls had excellent stage design, and if they manage to keep it up with Dark Souls (sans the Nexus), I will be very please.

I've never played Demon's Soul so I was just making blunt assumptions and speaking from the top of my head . I really don't want this to be like Elder Scrolls and would much rather have the Zelda approach to the open endedness. Sandbox is, however, a possibility. Unlikely of course, but still.
