Really loved a lot of the stuff on the original Gran Turismo 1 soundtrack. Much of it gets re-arranged and remixed for later games. Like the Wind is heavy on the sax.

The soundtrack for the CD32 version of Skeleton Krew is a very fine example of trip-hop beats. It's also completely unrelated to the gameplay and game itself. Link to the playlist.
