I have to heartily recommend Pikmin 1+2- they are my favourite games to come out of this generation. I loved the damn games so much I got a Bulborb tattoo As recommended earlier- I can't give strong enough thumbs up for Killer 7- the GC version is awesome. F-zero GX is a fantastic racing game, though it gets stupidly hard.

I'd second Viewtiful Joe, Ikaruga, Beyond Good & Evil, and Killer 7. I enjoyed them a lot, and the first too especially are more of a pick up and play type. I'm not sure about the latter too...they have a plot going on in both of them, but I think you'd like 'em; they're pretty easy to get into.
I'd actually like to add Pinball Hall of Fame, if I may. It doesn't appeal to everyone, I know, but I liked it a lot - it has some pretty faithful renditions of old pinball tables, and a lot of them play really well (Victory would be my favorite). It's a good pick up and play game, and I've seen it going for about $10 at Kmart before, so I don't see why it wouldn't be a bad choice.
Plus, the announcer reminds me a little of Marc Summers, which is mildly amusing for some reason...probably only for me, though.

Actually, I have every intention of picking up Pinball Hall of Fame because I'm a huge Pinball-aholic.
