So I've got a PS1 emulator and a few ISOs, with most of them being downloaded as folders containing a .CCD, an .ECM and a .SUB file. I know CCD stands for Clone CD and is a typical format for PS1 ISOs and that the .SUB files are "subchannel data", a copy-protection measure included in most of the console's library and that also works against emulators. So my question is, how do I get over it so I can run the games perfectly (they don't run at all on my side)?

I'm only aware of libcrypt as copy protection measure connected to subchannel data, and it's hardly making up the most of the PS1's library.
What you should do first is to unecm your ECM file to a proper image.

If you want to run them on emulators, it's best to download Daemon's Tools. Mount the disc image and play on the emulator as if you had a real CD.

What you should do first is to unecm your ECM file to a proper image. This. It isn't the .sub file that is the issue, it's the .ecm file. ECM is a file compression format for disc images, and you need to decompress the file with something like ECM Tools to make it a useable .img file. After decompressing the .ecm file, take the .ccd, .sub, and .img files and make sure they're all in the same folder, then load the .img file in your emulator. ReyVGM: There's no need to bother with mounting a disc image in Daemon Tools these days. Every PSX emulator worth using these days is capable of loading a disc image directly, so mounting an image on a virtual drive is unnecessary.
