I like good turn-based systems first and foremost. SMT:Nocturne's press turn system, and all of its variations, would be my favorite... though I also really enjoyed Xenosaga Episode I's system of boosting and combining attacks, and Brave Story PSP's use of brave power and extra attacks is also really fun. And then there's PoPoLoCrois Monogatari -- the PS1 game, not the PSP one. Quite possibly the most difficult kid's RPG ever made, but man did that battle system ever rock. I'll describe it in detail sometime... it's really extraordinary, and while the PSP game had a dumbed-down version of it, it just wasn't quite the same...
And on the non-turn-based side of things, Princess Crown is TOTALLY where it's at! Man, that game is fun... battles are totally intense, and immensely satisfying.

Going to have to third the LMBS (and the ripoffs). Aside from that, I liked the Conditional Turn Based system in Final Fantasy X, and Baten Kaitos' surprisingly good card battle system.

I've loved every tri-Ace battle system, so they're tops to me. Out of their games, I think Star Ocean: Blue Sphere had the best battle system. It's way too much for a lot of players to handle, but for those looking for a lot of complexity as well as action, it just can't be beat. Just being able to learn new moves and spells often requires three entirely different conditions to be met, and meeting them is no easy task either. Then there's the whole combo system, and while some characters are fairly easy to combo with, others require more skill and timing than the average Final Fantasy junkie can muster up.
I love strategy and slowly-formed calculations too, so I can REALLY get into strategy RPGs from time to time. I'm the type of retard that would stay in one battle for two hours with a really hard boss that I could finish off but choose not to because I just gotta steal every last piece of equipment he has first.
For traditional RPGs, I think Chrono Trigger is the pinnacle. It's a bit too easy, but the battles are fast-paced and the combo attacks really make the game.

I'm a big fan of a lot of the RPG's already said, including the Valkyrie Profile series and Panzar Dragoon Saga. I love all of the Mario RPG's and their various battle systems with probably Mario & Luigi at the top. My favorite RPG battle system though has to be Skies of Arcadia's (no surprise). I just love the fact that everything you do in battle centers around getting your characters enough Spirit to do their special moves. Coupled with the amazing ship battles, you have an amazing game.

All Mario RPGs have great battle systems... but outside of that, I'm afraid I don't really have much. I do like Earthbound a lot, but its battle system is as basic as it gets, soooooooooo... I got nothin' else.

Star Ocean for GBC? Have not played that. That was more like Tales of... than Star Ocean right? I will have to play that game.

Well, it's side-scrolling like the Tales games, but overall I'd say it's very different from both Tales and Star Ocean.
What's cool is that tri-Ace decided to take the whole body parts system from Blue Sphere and expand upon it for Valkyrie Profile 2. Only probably is that everybody gives the credit to VP2 for being so innovative when Blue Sphere had it first. :P
