Is there a way to make ZSNES or any NES emulator play faster than normal?

Yeah. It's called the "Fastforward Key" in ZSNES (at least, in my version) and you can map it to any key.
For NES stuff, I know FCE Ultra does. I'm not sure if it's default, but for me it's mapped to the tilde button. I use Joy2Key so I can map it to a controller button.
Pretty much invaluable for old RPGs.

Ok. Two questions:
Is there a way to set exactly how much it speeds it up by?
Is there a way to keep the game moving faster without having to hold down a button?

FCEU does, if you go into the Timing menu, and choose the frame skips. Don't know about ZSNES. A lot of it may depend on the speed of your CPU and the game in question.
In these cases, yes, you need to hold down the button. In general, you can see about messing with frame skips to see how much it'll speed up the game. That's what I do with MAME.

In ZSNES' case, I think it just removes the FPS limit, MAME does the same.

ZSNES: Go to Config -->Speed. Where it says "Fast Forward", map the key you want there. Where it says "+ Emu Speed" and "- Emu Speed", map the keys you want there. Where it says "Toggle FFWD/SLWDWN", check it.
The "Fast Forward" key will allow you to go at the maximum speed selected on the "Fast Forward Ratio". If you checked the toggle option, then you can press the key to stay on that speed until you press it again. The "+/- Emu Speed" keys will let you increment (or slowdown) the speed in small portions.
If your computer is pretty fast (2 ghz or more), you will only have 2 speeds, normal and wicked fast. Apparently the ZSNES developers have old computers and haven't noticed that increasing the speed +1 (out of the 9 it has) with a fast computer sends your game into fast forward orgasm that pretty much prevents you from playing it.
FCE ULTRA (98.15 version ONLY): Go to Config --> Map Hotkeys Go to Speed and map "Speed Down", "Speed up" and "Turbo" to whatever key you desire.
It only works on the last FCE Ultra version, the previous version (98.12) doesn't allow you to change all the hotkeys of the emulator. It does, however, have sprite disabling properties. So I suggest you get both.

I love using the spacebar button for speeding things up in Visual Boy advance lol.

I use Nestopia for NES emulation and it has a speed up function.
Go under Options -> Timing -> Speed -> Unclick 'Use Default' -> Put bar up as far as you like it
