What emulators do they run on if any?

ePSXe. Arcade versions don't run in anything afaik.

The thing is, Raiden 2/DX use an as-of-yet unknown protection hardware that's very hard to emulate. So even if you were to acquire the ROMs and run them in MAME, bypassing the warnings, you'd basically only get background art, with the sprites, text, and everything else appearing scrambled like a poorly-maintained NES game. Not worth playing.
However, you can take heart in knowing that the PSX ports of these games are arcade-perfect.

The MAME team got new chips and they are going to decap them. So hopefully they will be emulated once they figure out the protection.

Hell, the PS1 ports of Raiden 2 and Raiden DX are better than arcade perfect. More modes / options / etc. Just watch out for 2p play in Raiden Project...that's the one weak point (bit of slowdown there; don't remember if it was in the original or not). If you can scrounge up the budget rerelease of Raiden DX from a few years ago, you'll be set. Good lord is it a misunderstood gem.

The psp versions ARE great, and putting a portable system in TATE is much more simple than tipping over a television(and they still play great).
