I'd say pretty much every Contra, Metal Slug, Turrican or Mega Man clone is generally OK.(several examples: Journey to Silius, CrossFire|Demon Front, GunForce 1 & 2|Jim Power, Gunlord, unreleased Hardcore from Dice looked promising| Darkwing Duck, Mitsume ga Tooru). With a few exceptions ( Contra Force is questionable, Stargate on Genesis is hardly my favorite too). It's too many to list really. One game i'd like to highlight separately though: upcoming Antipole DX, a remake of the PC/X360 bare-bones original. It's more like action platformer with added 'gravity' gimmick, but most importantly-it has one the coolest main character designs ever for a given genre, in my opinion. Really like this.

What about any pre-Contra run 'n' guns like this one from Nichibutsu? Dunno about that first one, but Galivan is a decent exploration-based action platformer. I would mention Xain'd Sleena/Solar warrior (ARC, 1986) as it features a combination of cool new (or new-ish) ideas for the time that you'd kind of expect from run 'n guns and action platformers now and plays alright - choose your own path (level select screen/hub map), double jump, mini-bosses, scrolls both horizontally and vertically, move while shooting.

My favourites are Gunlord, Hard Corps and Gun Force 2.
To be honest, I have never seen bad run 'n gun games. I enjoyed every one with the exception of Ikari Warriors.

I prefer run'n guns that are auto-scrolling, like Heated Barrel (TAD) and Chelnov (Data-east). Bullet (Sega) and Total Carnage (Midway) is both dual-joystick and auto-scrolling.
If we are including platformers then Data-East's Psycho-Nics Oscar is my favourite.

Just wanted to add that playing Ninja Spirit with only shurikens is great fun and gives you that Irem difficulty right from the start.

One reason why Contra usually never gets old to American gamers is that, although 2D, it was like the Wolfenstein 3D or DooM game before 3D exploration graphics was developed well enough to please gamers. America loves guns so much, gun stores become sold out after certain restrictions are made. Correct me if I am incorrect on any of them. Another thing about American gamers in run n guns, they compared Chelnov and Wolf Fang: Kuuga 2001 to Contra, but Japanese gamers did not, but say that Wolf Fang uses elements of Chelnov, most obviously auto-scrolling. Both Jurassic Park (not the Blue Sky ones on the Genesis) and Lilo and Stitch got decent sidescrolling run-n-gun games.

I recommend Turrican too, especially the second game: it's simply very, very good and exploring the huge, maze-like levels never gets old. As for which version you should play, while the Amiga is also memorable for Chris Huelsbeck's score, the C64 one is notable for pushing the C64's hardware to its limits. It was a real miracle back there, and still looks great for a computer made in 1982! Not a fan of the genre in general but I loooove Sunset Riders. I think it's largely because it's slower-paced and more methodical than most games in the genre, at lost those I've tried, but I'm also quite fond of the level design, graphics, and especially, the music. There are some absolutely classic themes in there that I can still hear in my mind even though I haven't played it in years. I tried Cowboys of Moo-Mesa and Mystic Warriors, but I just couldn't get into them all that much. Any other run-n-gun anyone here'd consider comparable to Sunset Riders in terms of pacing or overall feel?

NES - journey to silius, metal storm, bionic commando, batman (1988), ninja gaiden trilogy (if that counts). there is a relatively well-known korean run and gun for NES that i absolutely cannot remember the name of that was really well done (had a mech theme). SNES - metal warriors, cybernator (aka assault suit valken), contra 3, castlevania 4, earthworm jim Genesis - contra hard corps, gunstar heroes, the adventures of batman and robin PS1 - MDK, Apocalypse (starring bruce willis)

Never played Contra: Hard Corps, but I enjoyed Contra III. Best game in the series IMO.
