I'm actually a big fan of the really old stuff like Star Soldier, Astro Warrior, and Xevious. Alternately, you could just go for Super Thunder Blade; you'll never want to play another shmup again, saving you the trouble.

Blazing Lazers for TG-16 is another great game for beginners although the difficulty gets very high on the 5th or 6th stage, I think. I was never able to beat it, but the first 5 or 6 stages are still great and really fun while being not too hard. It also has some of my favorite video game music on some of the stages and excellent graphics (for the TG-16.)

PC Engine has some really great STGs. Gunhed, the Soldier Series, Gate/Winds of Thunder. The Cho Aniki games are also pretty decent though the first game is definitely the better of the two.
R-Type is an awesome game, one of the finest the genre has to offer. It's hard, but not like Gradius where if you die once you might as well start from the beginning.
ESP RA.DE is really awesome. The graphics are ridiculously detailed, and the little scenes that play at the start of each stage are great to watch.

I don't think anybody mentioned Toaplan shmups. A few of them got ported to the genny. I'd say check out Fire Shark and Truxton.

Gradius and R-Type are the Super Mario Bros of shmups. Can't get better recommendations than that. Some extremely ruthless checkpoints, yes, but since a playthrough only takes around 20min, it's far from devastating. Though being stuck in restart-hell for a long period of time in any shmup could drive a person insane (mostly just happens in games with strict scoring mechanics though).
Speaking of which, I also recommend playing shmups for scores rather than completion, as that allows for non-linear progression. But I'll have to return with some namedropping on that subject in the morrow.

Has there been any mention of Raptor: Call of the Shadows, Tyrian, or Stargunner? Excellent PC-based shmups with economy systems where you can purchase upgrades for your ship.

If you like Gun*Nac, make sure you check out Gunhed/Blazing Lazers on the TG16. Despite one being Compile and one not, they're very similar games.

On the NES... Normally, I'd recommend Xevious, but if you didn't like 1942 or Gradius...
For relatively "easy" shooters -- Life Force, 1943, Gun*Nac, Legendary Wings, and Abadox. I find Zanac to be insanely difficult, but it is technically impressive and quite cheap.
If you are gonna emulate or import, there's a few stunners that never made it here. Uchuu Keibitai SDF, Gradius II, and Crisis Force.

All you really need is MAME, a half decent PC to play it on (preferably connected to a TV), a good wireless gamepad and a bunch of roms.

Fantasy Zone is an odd, easy-ish shooter, with a cash/store mechanic and some actual scoring to risk your life for. And it's ported to pretty much every system there is.
Aerofighters (Sonic Wings) on the SNES is very charming and easy to get into, but far from easy to clear. Random stage order and a bunch of different ships to experiment with makes it a fun game to keep returning to. Keeping track of your scores becomes a convenient way to see your progress.
Now I'm off to the first week of STGT'11!
