I'm also one who doesn't like the N64's graphics that much. Besides the swampyness everything also seemed so... geomectrical and clear cut, PS1 games seemed to have the more interesting architecture, even if everything looked like slightly tilted cardboard props. But I'm first to admit that I don't have that much first hand experience with the N64, because I got rid of it pretty fast once I realised that Nintendo's first party stuff isn't doing much for me anymore and there's not much more than that on there.
Anyways, first PS1 memories, eh? I can remember being really amazed at that manta ray screensaver back when I got one. And Breath of Fire III was my first game for it, I think.

There are a few games that allow to disable Anti Aliasing with cheat codes. I know for sure about Shadow of the Empire and Turok, but I guess there were some more. While I sometimes like sharpness, it also disables the Alphablending in Turoks 2d objects which looks a bit shitty on the otherhand. I tried to find a good screen that shows the dithering, but I couldn't find one, so I made you quick and dirty example^^ Anyway, I think my first PSX experiences were playing the Jumping Flash Demo in a shop, and drooling over Star Gladiator's boxart in another. I actually got my first PSX in 1999 or 2000 (I bought my PSX, my NES and the Saturn roughly around the same time but I just can't rmember in which order I got which). I bought a used one with modchip for 100DM together with GT and TombRaider III. And of course I got several burned games once I got the PSX, starting with Jumping Flash (OF COURSE!), Mega Man 8(yay!) and MK4 (better play UMK3 again >_> ) Sadly the modchip was already more or less in its last breaths and most attempts to play a burned Disc ended in an endless swapping orgy. xD

Oh, I'm sure the N64 was more powerful on a technical level seeing as how it was newer than the PS1, but I'm just going by what it looked like to your eyeballs versus any technical comparisons.
So given how different games on the two systems looked and little things like CGI cutscenes and whatnot, I don't think it's cut and dry which console had the "better" graphics, I think it all depends on the game in question.

Playing through Super Mario 64 again is like a breath of fresh air.
Before I started playing yesterday, I thought everyone was just being super nostalgic for it, but it's actually a good game. Maybe even really good. I have a feeling it would've kept me occupied for quite a while, like I could have subsisted on that game alone back around 1996 or so...
But yeah, I probably would've purchased a PS1 or Saturn instead, if I had to buy one and only one. Sony had a much better quality and quantity back in those days, in my opinion.
