If it's a horror game, a FPS, an MMO, a Western game developed past the year 2000, a PC game, and probably a bunch of other categories that aren't coming to mind right now, odds are extremely high that I have never played it (and probably have little interest in ever doing so).
I'd be here all day if I named series and specific games. I can't imagine anybody has hit all the big-name games, and even if you devoted yourself to doing so, I think that would be a pretty sad gaming experience because then you'd have no time for exploring hidden gems. I love playing weird obscure stuff, and I often find those games more satisfying than the games that get all the hype and attention and big sales.

I think I am the only Xbox and Xbox360 owner who never played a Halo game,and I don't think I will ever play one. Don't ask me why, it's a series which just doesn't interest me in the slightest. I also never purchased,let alone played,any game from major football franchises,be it a PES or a FIFA. Finally,never touched anything from Dead Or Alive.

RPGs are the big one, JRPGs, CRPGs, MMOs, none of 'em. Those and adventure games I haven't tried again since I was a kid and the only Square game I own is Einhander. All the hype for the Souls series has me interested, but I haven't jumped on board yet.
Otherwise, I'm a bit behind on SNK fighters and PS3-era bestsellers (Mass Effect, Bioshock), but that's about it.

I was really late to a lot of games, but I guess for being a big RPG fan I haven't really played Ultima. I own them all these days, still haven't played them.

I think I am the only Xbox and Xbox360 owner who never played a Halo game,and I don't think I will ever play one. "No. There is another." ...myself, namely. Never owned the original Xbox, but my 360 came bundled with Halo 3: ODST. I traded it, unopened, to someone for a copy of Bionic Commando '09. My known non-interest in FPSes has stopped me from playing the others. As far as what huge games I've never played, besides Halo... there's probably too many to list.

I'll probably never put serious time into a Souls game. As much as I appreciate what they're trying to do with combat, I personally find the difficulty far too punishing, and some game mechanics a little unclear at first. I've played a grand total of 3 hours of Demon's Souls and the first Dark Souls. I don't feel like going back into them anytime soon, and as popular as the series has become, I feel like I'm missing something huge until I go look at footage again and remind myself why it was that I never clicked with it.

There was one Halo (2 I think) installed on my HaXBox. Played it for ten minutes and decided I could use the space much better for more ROMs, Emulators and the Taito Arcade Collection. I also never played any Gears of War and I have no intention to do so.

My MegaMan story:
Since several people have spoken about their Mega Man stories, here is mine. I bypassed the series at the time because I was a SMS guy, and even when I acquired a NES, the games never really appealed to me. I then tried one or two SNES incarnations, but even though I liked their style, they did not stick either. Finally, I also tried something on DS, which I also liked, but again, same story.
It's a recent homage that sparked my interest in old Mega Man: namely, the 3DS old-school-style "Mighty Gunvolt", which came free with "Gunvolt Azure Striker" in Europe. I loved it to death, and I loved the diffficulty. I bought the DLC, and now, I'm playing the old Mega Man games. But it's really a series I had completely bypassed, which is strange, considering the reverence I had for the Capcom name at the time. I guess it's the NES origins of the game, coupled with inconclusive tries to play it at the time, that made me bypass it and go play Wonder Boy or Super Mario instead. Hopefully this absence is now partially behind me...

Oh yeah, sports games I totally bypass(ed). Besides fun racer Mario Kart, at least a couple of those I played.
And the mentioned West-RPGs. I didn't have a PC until... 97 or 98 I think and even then never really used it for gaming outside builder simulations until more recent years. They also always seemed too complicated and unapproachable for someone who grew up on JRPGs on consoles. I have played entries in the three biggest series recently-ish, two of the Ultimas, two of the Might & Magics, and the first six Wizardrys (minus IV, because it's IV)... but really, I can't say I particularly liked them much. I guess I have a japanese taste in RPGs, going for their output plus Wizardry (which I'm still not sure I even DO like all that much, besides being still weirdly addicted to them). I do like Skyrim and the Mass Effects, but those do have a rep for being heretically simplified for console-noobs. For example the second coming of Baldur's Gate, Dragon Age: Origin, did absolutely nothing for me, I DO prefer the hated sequel.

It's tough to think of a major publisher (or even just a prolific mid-status developer) where I've managed to completely avoid playing anything they've ever released.
I mean, I guess I could technically say Infocom, but their relevance is long dead and gone.
As far as game types go, I, like many, have also managed to skip most of the 'old classic' WRPGs (Ultima, Might and Magic, etc...). I do mean to get around to playing a Might and Magic game, I just don't know which.

WRPGs, a genre I never played either. I was a console player, so there's that, and there are other factors which resulted in my first WRPG being KOTOR. I don't really feel the need to play the older games in this genre at the moment.

There are a ton of games I've bypassed completely, but the ones that stand out to me would be the Infinity Engine styled games. I've tried playing Baldur's Gate and Fallout, but I cannot get into them at all. I acknowledge that they're good games, and I definitely see the appeal, but I've come to the conclusion that they're just not for me.

-Deus Ex. I own part 1, but I haven't played it yet. Yeah, I know. -Any Metal Gear game. -World Of Warcraft. The concept didn't appeal to me to much, and the stigma of acquiring what's basically a form of addiction didn't seem too inviting either. -Ridge Racer. Same here, and the last one could extend to every major sports/simulation franchise, since I never really cared about them in the first place. I also got Ultima IV for free upon registering to GOG, and never played it. On GOG I also bought a bundle with the first 6 Might and Magic games, played a while with the third or fourth, got extremely bored and then never touched them again (and I usually like RPGs).
