This is the best thing I've heard all week! Glad someone is excited for that. I'll try it, but after not really digging Point Blank DS, I'm sure sure if substituting tapping for shooting is really for me.

Cover Shooters. It feels like the days when level design was dominated by waist-high walls is over and designers have gone back to making cover a natural part of the enviroment.
Space Combat Games. While the Elite-inspired "space trader" genre never died, the Wing Commander school of story-focused missions pretty much bit the dust with Freespace 2.
Non-Licensed Racing Games: It feels like racing games these days serve mainly as car commercials. Gone are the days when you could drive cool made-up cars outside of GTA-style games.

I really miss World War II FPS games. WW2 FPS became really, really played out after a while and it needed a long break. However it has been long enough now and technology has advanced enough now, that it would actually be interesting to see what they could with the genre again.

Woody Alien : Just out of curiousity, why don't you count Touhou Project? Because to me these kinds of games are stuff like Parodius, Twinbee, Akkanvader etc. Touhou is more a bullet hell with anime graphics, and also I strongly dislike it.

VATS in Fallout 4 slows time instead of actually stopping it like in last gen's FO games. I'd say that's bullettimeyish, especially if you're going to count MGSV.

About the only constant between those and the canon works is that Reimu is an angry god of destruction that wants to destroy everything and get paid, son. Otherwise, the fan works play up everything and take the chaotic neutral gods fucking with each other concept to absurd extremes. It's a case where fan content is more popular than the stuff it was inspired by.

This thread makes me want to create a sub-topic: what genres reached their limit?
Beat 'em ups - too many to entertain people, but I guess Dead Rising has reached the peak.
Fighting game - mind-gaming with dancing while it's next to impossible for developers to balance with nice looking characters and stages simultaneously. Gamers love glitchy ones like SSBM, which explains why it was used with the SSBB theme at Video Games Live concerts.
FMVs (e.g. Dragon's Lair) - Almost everyone refuses to even enjoy anime or reality-based ones over Dragon's Lair. Perhaps wear 3D goggles can expand it a little bit more.
Shoot 'em ups: Mushihimesama Futari on God Mode (or whatever mode reached the peak) at the Last Boss.
Racing - Rapidly drifting (F-ZERO GX) or snaking (Mario Kart series).
Sports: so accurate to the laws of physics (Electronic Arts) it's not fun to every hardcore gamers, unless they enjoy them activities.
Light-gun: killed by the next genre below...
FPS: As Japan is to bullet hell shoot 'em ups; as USA is to FPS. WWI, WWII, Vietnam, Korean, Gulf, Cold, modern, sci-fi, etc.

Retro polygons: From "I, Robot" to Star X for GBA.
Retro Vectors: From Battle Zone to Arc System Works' DSiWare game Vector Racing.

Touhou isn't anime-like at all. The fanworks? Yes, they can and do fall into full-on anime stereotype hell (though there's plenty of excellent and amazing fanworks as well) but the games themselves are mostly just fun adventures with silly "lovable jerk" style characters. The art style is rather unique, and even though ZUN gets panned for his art I'll take his soft round heads and awkward faces over generic anime fanservice any day.
