Not yet mentioned:
*Aquaria: a beautiful game even if I have some issues w/ the gameplay.
*Astal: even with the not-so-hot animation on Astal himself.
*Castlevania SOTN: fantastic pixel-art graphics, for the most part.
*Princess Crown: Obora Muramas/Odin Sphere progenitor.

Ah, if only Falcom still made 2D Ys games. The PS2 version of Eternal Story looked awful and there's no way the PSP version can match the PC version either.

+1 to previous games mentioned. I think Yoshi's Island also fits in this category, it was pretty impressive for a SNES title and at least for me, better looking than DKC.
