To be honest, I don't see much Evangelion taking prominent influence in Xenogears. They may share a few ideas, but the aspects are different. To me, it's more like both Evangelion and Xenogears drew influence from a mix of sci-fi flicks and religion. Like how icons of Japanese culture such as Miyamoto Musashi and Kojiro Sasaki are reinterpreted differently in the anime/manga Yaiba, the manga Vagabond, and for Square Enix in Brave Fencer Musashiden.
Evangelion takes a lot from the 10 Sephiroth and the Tree of Life/Kabbalah, with hints of 2001:Space Odyssey and Akira.
Xenogears looks to celebrate various influences, such as Star Wars, Macross, Soylent Green, 12 Monkeys, Solaris, and also 2001:Space Odyssey. Xenogears has a touch more in terms of religious and Christian overtones, yet still incorporating the idea of reincarnation, while Evangelion is more Judeo-spiritual.
I really enjoyed Xenogears overall, even if disc 2 felt like a rushed mess. But so did Final Fantasy VII.

Honestly, I see it in a lot (mid to late) PlayStation era Square games, some more obvious than others. Xenogears' 2nd VN Disc, Chrono Cross exposition dumping all over that beach, or Final Fantasy VIII constantly almost falling apart at its seams for the second half, for some of the more prominent ones.

Totally. It just seems as consoles get more processing power, it takes more staff, more time, and more resources until a game snowballs into development hell. *cough The Last Guardian *hack FF XIII:Versus/FF XV
I think 2-D games, especially from the 16-bit era to current handhelds have that sweetspot of developing a quality game from start to finish.

The events in Disc 2 are so crazy and large-scale that there's no way they were going to pull it all off within one CD, especially if they were going to have some more of those interminable 3-hour dungeons*. I still think it's cool that they threw in a few battles and exploration to break up the storytelling now and then. Xenogears is probably the most flawed game I ever loved as much. I would wake up in the middle of the night and just start playing it instead of going back to sleep.
*The sewers were especially awful, but I'm sure there was at least one other dungeon that was tedious as hell

The Tower of Babel toeiAnd yeah that era of PS1 games was weird, it's why I'm really not digging FF7 Remake. Because all they had to do was give the game a bit more bite. And, hell figure out some stuff to do at the end.
