Mesen has the most user friendly interface i've seen so far for the NES emulation and great compatibility. File sizes on recorded videos are still gigantic though.

So, now that byuu's OCD autism has turned higan nigh unusable, any good alternatives for SNES emulation (that won't choke on F1-ROC 2)?

Go back to an older version, to bsnes or to snes9x. Maybe there are some good console only ones too.

Yeah, I'd say just stick with the latest 9x. You may not be able to play a few translations, but they're not necessarily among the best of their genre anyway.
I'd also suggest getting a Raspberry Pi with a couple of good USB gamepads, though I probably wouldn't recommend it if you want to do more than 2D era gaming.

What's the best N64 emulator if you want the games to really look like they would on the actual hardware, complete with scanline filters?

I think Kega Fusion is no longer a definitive choice for Sega, as it's been discontinued for such a long time. It still does a good job with lots of handy functions, but there're active projects like BlastEm, Exodus, or Genesis Plus GX out there.

Phoenix Project Emulator is, IMHO, the best Jaguar emulator right now, besides Virtual Jaguar. It also runs 3DO and ColecoVision games pretty well and i think Game Gear games as well

Updated the original post slightly to make some new suggestions. Please note that I haven't tried every emulator people in the thread have mentioned, so if any of the ones in the list aren't working for you, try one of those! But seriously, if your computer's strong enough, you don't have to keep using SSF for Saturn emulation. I'm making a public service announcement, here. As long as your computer can handle it, you want Mednafen or RetroArch's Beetle Saturn core for Saturn emulation, not SSF. OK? Cool. I think Kega Fusion is no longer a definitive choice for Sega, as it's been discontinued for such a long time. It still does a good job with lots of handy functions, but there're active projects like BlastEm, Exodus, or Genesis Plus GX out there. Out of all of these, which would you say is generally the best in terms of game compatability, ease of use, and not being too CPU-intensive? I gotta replace Kega Fusion with something.

For most users, Genesis Plus GX would be the definite choice in terms of system requirement, which is much lower than other two and does not sacrifice compatibility if you stick to commercial games. The only thing it doesn't support is 32X and other options aren't great even compared to Kega Fusion, but this is only because no one cares about 32X emulation. It's available as a standalone emulator, but was also ported to various frontends (including RetroArch/Libretro, of course). Anyone who wants filters and other options may want to install it from that, instead.

I haven't really tried any of these modular multi-emulators that run different cores.
How much of a pain in the ass are they to set up?

Retroarch cores can be shoddily ported, inferior to standalone, so it depends what you system you want to use. The Android port adds other flaws. E.g. I never could use manually backed up cores with it, as those aren't recognized, which is kinda bad when you realize that things broke with an update. Whole thing being an online only affair isn't really optimal in this case.

Well, let's say that I'm particularly aiming at Saturn, PS1, Sega-CD, and PCE-CD here.
Because nobody's using any of old emulators that I use anymore.
I'm still using freaking Magic Engine (legit, an ex of mine paid to legit register it for me 21 years ago) for PC-Engine and PCE-CD stuff.
And it'd be nice to drop ePSXe.

So, for X68K, what's the current choice for use in Win10, with English menus?
